Exquisite! Hida brand beef kalbi grilled with binchotan charcoal

Hida beef has a high degree of marbling and fine muscle fibers resulting in tender and sweet meat. We grill the meat with binchotan charcoal to seal its flavor and to serve it to our guests at its best. Three sauces to choose from: wasabi shoyu, algae salt, and citrus soy sauce mixed with grated radish.

Fatty part of Kurobuta pork has a clean and light flavor. To bring out the best flavor of this meat, it is steamed at the table. Under our chef’s supervision, three sauces have been created: citrus soy sauce, miso sauce, and spiced soy sauce.
