- Preparation is the key to success. This can be applied to any type of work. We, cooks also value the importance of preparation on a daily basis by checking the quality of ingredients, washing the vegetables throughly, filleting fish, and making a soup stock. We use dried bonito to make our soup stock. Great chicken stock preparation starts with washing the chicken bones. I highly value the cooks’ detailed work by skilled hand.
